Hot water breaks grease bonds faster; cold water with the right chemistry gets to the same result on more passes. For most commercial cleaning the difference is time rather than outcome — but on heavy grease it is real, and pretending otherwise would be selling rather than explaining.
What heat actually does
Grease and oil soften and emulsify faster at temperature — the same reason dishes wash easier in hot water. On a heavily greased dumpster pad or drive-thru lane, a hot-water machine visibly outpaces a cold one.
Heat adds nothing meaningful on organic growth, general grime or concrete cleaning, which is chemistry-and-pressure territory. The advantage is specific to petroleum and food grease.
How cold water closes the gap
Degreasers do with chemistry what heat does with energy: break the bond between grease and surface. Given proper dwell time and repeat passes, cold-plus-degreaser reaches comparable results on all but the heaviest accumulations — it simply takes longer.
On a maintenance schedule the gap nearly vanishes: recently deposited grease releases readily either way. The scenario where hot water clearly wins is rescue cleaning of long-neglected grease — which a schedule prevents from existing.
The honest bottom line
We run cold water and compensate with chemistry, dwell and passes. On maintained sites the result is equivalent. On a badly neglected grease surface, expect the first visit to take longer than a hot-water crew would need — after which the schedule keeps everything in easy territory.
